Balsamic vinegar concentration through a vacuum kettle "concentrator". In the video it can be observed: the load of the product by suction, putting the vacuum tank under vacuum, the concentration of vinegar at 50 ° C, product and condense discharge and finally washing.
The balsamic vinegar is loaded with an initial Brix of 30, the concentration lasts about 90 minutes at a temperature of around 50 ° C. The final Brix is 70. The condensates which are evaporated from the product in this case is white vinegar.
